1/3 cup peanut butter, softened
3 tbsp water
1-1 1/2 tbsp soy sauce
1/2 lime, juiced
1 tbsp fresh minced ginger
1/2 tsp brown sugar
2 clove garlic, minced
1/4 tsp red pepper flakes, or to taste
1/4 cup cilantro
1 tsp sriracha
salt to taste
Blend all ingredients in a food processor. Taste and adjust seasonings.
This is a mild Thai peanut sauce recipe. If you prefer a spicier version, you can add extra red pepper flakes or even fresh diced chilies. Serve your Thai peanut sauce over pasta or noodles, or use as a dip for veggies. You can also use Thai peanut sauce as a salad dressing if you add some extra liquid to thin it out a bit.
Some recipes use coconut milk instead of water or add red curry paste for spice.
Revised the soy sauce down from 2 Tb (depends on the peanut butter used) and the lime down from a whole lime, on the second making.
